Chicken and Cheese Quesadillas

Ingredients
1 tsp (5 mL) canola oil
½ of one bell pepper, any colour
4 small tortillas
2 slices thin-sliced oven roasted chicken (deli meat)
2 cups shredded marble cheese
Non-stick spray
Directions
Step 1. On a cutting board, cut pepper into small cubes about 1 cm and place in a bowl. On the same cutting board, cut sliced chicken breast into small cubes about 1 cm.
Step 2. Heat oil in a small pan on medium heat. Add peppers and cook, stirring often, until a little bit soft. Take off the stove.
Step 3. Lay out the tortillas on a clean workspace. Put ¼ cup cheese onto half of each tortilla (we are going to fold them over so we’re putting all of the filling on one half). On top of the cheese place ¼ of the chopped chicken and top that with ¼ of the peppers.
Step 4. Put the rest of the shredded cheese on top of the pepper (1/4 cup for each quesadilla) and fold each tortilla over to form your quesadilla.
Step 5. Find a large pan – one that will fit all four quesadillas if possible. Spray your pan with non-stick spray. Place the four quesadillas on the pan without overlapping.
Step 6. Place the pan on the stove and turn the heat on to medium-low. Cook until the cheese is melted (about 5 minutes), then carefully flip and cook on the other side until the cheese is melted all the way through (about 5 more minutes).
Step 7. Place the quesadillas on a plate and let cool for 5 minutes before eating.
Tips
Feel free to use any cheese you like!
