French Toast in a Mug

Ingredients

  • 1 slice whole wheat bread
  • ¼ cup (60 mL) milk
  • 1 egg
  • ¼ tsp (1.25 mL) vanilla
  • ¼ tsp (1.25 mL) cinnamon
  • 1 tsp (5 mL) sugar (optional)
  • Maple syrup (optional)

Directions

1. Tear up the bread into small pieces and put in a medium-sized mug.
2. In a small cup or glass measuring cup with a spout, add the milk, egg, vanilla, cinnamon and sugar and mix with a fork until smooth.
3. Slowly and carefully pour the milk mixture over the bread in the mug. Let sit for 10 minutes so the bread can soak it up.
4. Place mug in the microwave uncovered and cook for 1 minute. Take the mug out of the microwave and check to see if the middle is cooked and not gooey. Keep cooking on high for 30 seconds at a time until the middle is firm and doesn’t look wet. (Be careful removing the mug from the microwave, it may be hot! If it is hot, use an oven mitt.)
5. Let sit a few minutes to cool off before diving in – it’s hot!
6. If desired, drizzle with a little bit of maple syrup.

Tips

  • Use day old bread or toast the bread lightly before tearing and adding to the mug – it will soak up more of the milk and egg!
  • To make ahead of time, stop at Step 3 and cover the mug in plastic wrap, then refrigerate until you need it, even overnight! In the morning, just remove the plastic wrap and pop them in the microwave.
