Ashley’s Grilled Cheese with Gouda and Bacon

Jump to Recipe

If you love grilled cheese as much as I do, give my friend Ashley’s recipe a try! Made with sourdough, bacon, and Gouda cheese, it’s a delicious twist on the classic sandwich.

Plus, it pairs perfectly with a nice warm bowl of tomato soup for dipping, if that’s something you enjoy. I hope you’ll give it a try!

Ashley’s Grilled Cheese with Gouda and Bacon

Ingredients

  • 2 slices of sourdough bread
  • 1 tbsp butter
  • 2 slices of thick cut Gouda cheese
  • 2 slices of thick cut bacon

Directions

  1. Cut the bacon into 1-to-2 inch pieces and fry in a pan on medium heat until it reaches the desired crispness.
  2. Set the bacon aside, drain the grease, and lightly wipe the pan—leave some of the grease behind to help grill your sandwich.
  3. Place your pan back on the burner and warm it up over medium-high heat. In the meantime, begin to build your sandwich.
  4. Butter both sides of your bread. Place a slice of Gouda and then the bacon on top of the bread, follow with the second slice of Gouda, and finally top it off with the second slice of bread.
  5. Place the sandwich on the hot pan, fry for 3 minutes per side, or until it’s as dark or light as you prefer. Move to a plate, slice, and enjoy!
