Tortilla Crusted Cilantro-Lime Grilled Salmon

Chill out on the patio with this easy summer BBQ dish.

Ingredients

  • 1/2 cup (125 mL) plain Greek yogurt
  • 1/4 cup (60 mL) finely chopped cilantro
  • 2 Tbsp (30 mL) finely chopped red onion
  • 1 clove garlic, minced
  • 1/4 tsp (1 mL) lime zest
  • 2 tbsp (30 mL) lime juice
  • 1/2 tsp (2 mL) honey
  • 1/2 tsp (2 mL) each salt and pepper, divided
  • cayenne pepper, to taste (1 pinch)
  • 4 (about 5 oz/150g each) skin-on salmon fillets
  • 2 tbsp (30 mL) Tex-Mex seasoning
  • 1/2 cup (125 mL) crushed tortilla chips
  • 1/4 cup (60 mL) thinly sliced green onions

Directions

1. Preheat grill to medium-high. In bowl, stir together yogurt, cilantro, red onion, garlic, lime zest, lime juice, honey, 1/4 tsp (1 mL) each salt and pepper, and cayenne.
2. Meanwhile, season salmon with Tex-Mex seasoning, and remaining salt and pepper. Grill, turning once, for 5 to 6 minutes or until fish is tender and begins to flake when tested.
3. Place salmon on serving platter; dollop yogurt sauce over top. Sprinkle with tortilla chips and green onions.

 

Tips

  • Rub a cut potato over the hot grill to prevent fish from sticking!
