Creole Shrimp Dip

This delicious creole shrimp dip will disappear quickly. Make a double batch – it’s great for a party!

Ingredients

  • 1 Tbsp (15 mL) vegetable oil
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1/2 cup (125 mL) sliced green onions
  • 2 cloves garlic, minced
  • 1/4 tsp (1 mL) salt
  • 1 pkg (8 oz) brick-style cream cheese
  • 1 cup (250 mL) shredded Mozzarella cheese
  • 1 cup (250 mL) shredded Swiss cheese
  • 1 cup (250 mL) shredded cheddar cheese
  • 1 Pinch cayenne pepper
  • 1/2 cup (125 mL) sour cream
  • 1/2 cup (125 mL) mayonnaise
  • 3 Tbsp (45 mL) Cajun seasoning
  • 1 Pinch cayenne pepper
  • 1 lb (500 g) cooked shrimp, shelled and tails removed, chopped
  • 1 baguette loaf, sliced and toasted

Directions

1. Preheat oven to 350ºF (180°C). Heat oil in a large skillet set over medium-high heat; cook green pepper, red pepper, green onions, garlic and salt for 3 to 5 minutes or until vegetables are slightly softened. Let cool.
2. Using an electric mixer, beat cream cheese, mozzarella, Swiss, Cheddar, sour cream, mayonnaise and Cajun seasoning; fold in pepper mixture and cooked shrimp.
3. Bake for 15 to 20 minutes or until all cheese is melted. Stir and serve with a toasted baguette for dipping.

 

Tips

  • You can substitute your favorite cheese(s) for mozzarella, Swiss and Cheddar cheese.
