Soft Frosted Sugar Cookies

Ingredients

  • ½ cup (125 mL) salted butter (room temperature)
  • 1 ½ cups (375 mL or 300 g) granulated sugar
  • ⅓ cup (80 mL) sour cream 5-14% (higher fat will yield a thicker cookie)
  • 1 large egg
  • 2 tsp (10 mL) vanilla
  • 2 ½ cups (625 mL or 325 grams) all-purpose flour
  • 1 tbsp (15 mL) corn starch
  • 1 tsp (5 mL) baking powder
  • ½ tsp (2 mL) salt

 

FROSTING (optional)

  • 1 ½-2 cups (375 – 500 mL) powdered sugar
  • ¼ cup (60 mL) butter, melted
  • 2 tbsp (30 mL) milk
  • 1 tsp (5 mL) vanilla

Directions

1. In a large mixing bowl, beat butter and sugar together until light and creamy, about 3-4 minutes. Add sour cream, egg and vanilla and beat until combined, scraping down the sides as necessary.
2. Add flour, corn starch, baking powder and salt and mix until combined. A slightly soft dough should form. Cover dough and chill for 1 hour in the refrigerator.
3. Preheat oven to 350 °F (180 °C). Roll cookie dough into rounds and place 2″ apart on a parchment lined baking sheet.
4. Bake for 9-11 minutes or until they look slightly puffed and dry but are not yet browning at the edges. Don’t overbake or they will become hard — they may look slightly underdone in the center but will set up as they cool. Let cool completely before frosting.

 

Sugar Cookie Frosting

1. In a medium bowl, whisk together 1 ½ cups sugar, melted butter, milk and vanilla extract until smooth. Stir in additional sugar as desired until frosting is spreadable (keep in mind that melted butter firms up and sets as it cools).
2. Spread over cooled cookies and decorate as desired. The frosting takes 1-2 hours to set, but it is still recommended to place wax paper in between layers for stacking and storing.

 

Tips

  • Making the dough ahead of time is a great way to get ahead.
  • It will last in an airtight container in the fridge for 2-4 days or in the freezer for up to 3 months.
  • When you’re ready to bake, thaw in the fridge if frozen then portion the dough out and proceed with the recipe as instructed.
  • The frosted sugar cookies will last in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.
