Sugar pie is a sweet French Canadian treat also known as Tarte au Sucre.

Ingredients

  • 2 eggs
  • 1 egg yolk
  • 1 cup (250 mL) whipping cream
  • 1 tsp (5 mL) vanilla
  • 2 cups (500 mL) brown sugar
  • 2 Tbsp (30 mL) flour
  • 1/4 tsp (1 mL) salt
  • 1 9-inch frozen pie shell, uncooked

Directions

1. Preheat oven to 400°F (200°C). Whisk the eggs and egg yolk in a bowl until frothy.  Add cream and vanilla; mix well. Add brown sugar, flour and salt; mix until combined. Pour mixture into the uncooked pie shell.
2. Bake 10 minutes at 400°F. Lower the temperature setting to 350°F (175°C) and continue baking another 35-45 minutes, until the center is set. Allow to cool on a wire rack. Serve at room temperature. Store in the fridge.

 

Tips

  • To add a top crust as seen in the picture, thaw a second pie shell (or double the amount of dough ingredients), cut strips and weave over the uncooked filling.
