1. | Preheat oven to 400°F (200°C). Whisk the eggs and egg yolk in a bowl until frothy. Add cream and vanilla; mix well. Add brown sugar, flour and salt; mix until combined. Pour mixture into the uncooked pie shell. |
2. | Bake 10 minutes at 400°F. Lower the temperature setting to 350°F (175°C) and continue baking another 35-45 minutes, until the center is set. Allow to cool on a wire rack. Serve at room temperature. Store in the fridge. |
