Looking for a new lunch or dinner recipe? This is one of my favourites—a delicious enchilada recipe passed along to me by my friend Gerrie.
Made using simple and easy to find ingredients, this recipe is foolproof, delicious, and makes enough to serve a family of four—it’s also easy to double or triple if you’ve got a bigger group of family and friends to feed, too.

All you need is ground beef, refried beans, taco seasoning, canned tomato soup, shredded cheese, and tortillas. Once they’ve been fully assembled and baked, I like to take the enchiladas straight from the oven to the table and let everyone serve themselves, family style.

Depending on your tastes, top them with sliced avocado and chopped cilantro. If you’re looking to add a side dish or two, my favourite pairings are rice, a medley of vegetables, or grilled corn with flavoured butter.
